Tandoori Spice, Yogurt Marinade, and Lake Taupō Brown Trout

North Indian cooks coat firm fish in a thick yogurt paste loaded with Kashmiri chilli, cumin, coriander, turmeric, and garam masala, then cook it hard so the surface chars while the centre stays moist. The yogurt tenderises the outer layer and carries the spice into the flesh. Lake Taupō brown trout is leaner and firmer than rainbow trout, so it holds its shape through a hot sear and a short finish in the marinade. A cool mint-coriander raita sits beside the fillet. A chopped tomato-cucumber-onion kachumber with lime and chaat masala cuts the spice. Cumin-scented basmati rice anchors the plate.

The Fish

  • 4 Brown Trout fillets: Skin on, pin bones removed, approximately 180g each, from Lake Taupō
  • 1 teaspoon fine sea salt
  • 2 tablespoons neutral oil, for searing

The Tandoori Marinade

  • 120g full-fat plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons Kashmiri chilli powder (or 1 teaspoon mild paprika plus ½ teaspoon cayenne)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ½ teaspoon garam masala
  • 1 teaspoon finely grated fresh ginger
  • 2 cloves garlic, finely grated
  • ½ teaspoon fine sea salt
  • 1 tablespoon neutral oil

The Mint Raita

  • 200g full-fat plain yogurt
  • ½ cup fresh mint leaves, finely chopped
  • ¼ cup fresh coriander leaves, finely chopped
  • ½ small cucumber, grated and squeezed dry
  • ¼ teaspoon ground cumin
  • ¼ teaspoon fine sea salt
  • Pinch of caster sugar

The Kachumber Salad

  • 3 ripe medium tomatoes, seeded and diced small
  • 1 small cucumber, diced small
  • ½ small red onion, finely diced
  • 1 green chilli, seeded and finely chopped (optional)
  • 2 tablespoons fresh coriander leaves, chopped
  • 2 tablespoons lime juice
  • ½ teaspoon chaat masala (or ¼ teaspoon ground cumin plus a pinch of salt)
  • ¼ teaspoon fine sea salt

The Cumin Basmati Rice

  • 300g basmati rice, rinsed until water runs clear
  • 450ml water
  • 1 tablespoon ghee or unsalted butter
  • 1 teaspoon cumin seeds
  • ½ teaspoon fine sea salt
  • 2 cardamom pods, lightly crushed (optional)

To Serve

  • Lime wedges
  • Fresh coriander leaves
  • Thinly sliced red onion rings (optional)

Preparation and Cooking Method

1. Mix the Tandoori Marinade and Coat the Trout

Stir the yogurt, lemon juice, Kashmiri chilli powder, cumin, coriander, turmeric, garam masala, grated ginger, grated garlic, salt, and 1 tablespoon oil in a bowl until smooth and evenly red-orange. Pat the brown trout fillets dry on both sides with paper towels. Season the flesh side with the 1 teaspoon fine sea salt. Spread the marinade over the flesh side only, leaving the skin bare. Cover and refrigerate for 25 minutes. Do not exceed 40 minutes; the lemon and salt will start to firm the surface and turn the outer layer chalky.

2. Cook the Cumin Basmati Rice

Heat the ghee or butter in a heavy pot over medium heat. Add the cumin seeds and optional cardamom pods. Stir for 30 to 40 seconds until the seeds darken a shade and smell toasted. Add the rinsed basmati rice and stir for 1 minute so the grains coat in fat. Pour in the 450ml water and the salt. Bring to a boil, then reduce to the lowest simmer, cover tightly, and cook for 12 minutes. Turn off the heat and leave covered for 10 minutes. Do not lift the lid. Fluff with a fork before serving and discard the cardamom pods if used.

3. Make the Mint Raita

Combine the yogurt, chopped mint, chopped coriander, squeezed grated cucumber, ground cumin, salt, and pinch of sugar in a bowl. Stir until even. Taste for salt. Keep at room temperature so the herbs stay bright; cold raita dulls on the plate.

4. Build the Kachumber

Toss the diced tomato, cucumber, red onion, optional green chilli, coriander, lime juice, chaat masala, and salt in a bowl. Set aside at room temperature. The salt and lime will pull a little juice from the tomato and soften the onion edge within 15 minutes. Stir once before plating.

5. Sear the Trout

Set a large heavy skillet over medium-high heat for 2 minutes. Add the 2 tablespoons neutral oil and swirl to coat. Wipe the skin side of each fillet once more with a paper towel. Lay the fillets skin-side down. Press each gently with a spatula for 10 seconds so the skin stays flat. Cook undisturbed for 4 minutes. The skin will brown and release when the collagen has crisped; if a fillet sticks, wait another 20 seconds before lifting. Flip carefully so the marinade stays on the flesh. Cook the flesh side for 90 seconds to 2 minutes. The yogurt spices will darken at the edges and form a dry, fragrant crust. Transfer the fillets skin-side up to a warm plate and rest for 3 minutes. Carryover heat brings the thickest part to about 54°C.

6. Plate

Spoon a mound of cumin basmati rice onto each of four plates. Set one trout fillet skin-side up beside the rice. Add a generous spoonful of mint raita and a pile of kachumber. Scatter fresh coriander leaves and optional red onion rings over the fish. Serve with lime wedges.

Chef’s Notes for Success

  • Kashmiri chilli: Kashmiri chilli powder gives colour and mild heat. Hot cayenne alone will overpower the trout. If substituting, keep the cayenne low and bulk the colour with sweet paprika.
  • Yogurt fat: Use full-fat yogurt for the marinade and the raita. Low-fat versions split in the pan and leave a watery raita.
  • Skin dryness: Wipe the skin a final time after the marinade goes on the flesh. Moisture under the fillet turns to steam and stops the skin crisping.
  • Marination limit: Twenty-five minutes is enough for the spices to cling. Past 40 minutes the lemon juice firms the surface and the texture turns grainy at the edges.
  • Cucumber for raita: Squeeze the grated cucumber hard in a clean cloth or your fist. Leftover water thins the raita into a soup.
  • Fillet thickness: Pieces thicker than 3cm at the head end need 1 extra minute skin-side down before the flip. Thin tail sections finish in about 5 minutes total; pull them earlier if sizes are mixed.
  • Resting position: Rest skin-side up. Resting flesh-side down traps steam and softens both the skin and the spice crust.
  • Chaat masala: A small jar keeps for months and adds a sour, salty lift to the kachumber. If you do not have it, cumin and a pinch of salt still work; the lime carries the rest.
  • Rice rinse: Rinse basmati until the water runs clear. Surface starch makes the grains clump and turns the cumin butter cloudy.
