
Yuzu-Miso and Lake Taupō Rainbow Trout
Grilling firm white-fleshed fish over high heat after a short yuzu-miso marinade is a common technique in Japanese home kitchens. The acidity of yuzu juice and the sweetness of the miso-mirin mix caramelise on the surface, forming a thin mahogany crust. Lake Taupō rainbow trout fillets are firm and mild, holding their shape on the grill without tearing. A 30-minute marinade penetrates the surface just enough to season the flakes, while a cold shock bath of rice vinegar, sugar, and salt transforms cucumber and shiso into a crisp, sour side that cuts the richness of the fish.

The Fish
- 4 Rainbow Trout Fillets: Skin on, pin bones removed, approximately 180g each, from Lake Taupō
- ½ teaspoon fine sea salt
- Neutral oil, for brushing
The Yuzu-Miso Marinade
- 3 tablespoons white miso (shiro miso)
- 2 tablespoons yuzu juice (or 1½ tbsp lemon juice + ½ tbsp orange juice if unavailable)
- 2 tablespoons mirin
- 1 tablespoon sake
- 1 tablespoon sugar
- 1 teaspoon soy sauce
The Shiso Quick-Pickled Cucumber
- 2 small cucumbers (about 300g total), thinly sliced
- 1 teaspoon sea salt
- 4 fresh shiso leaves, finely shredded
- 3 tablespoons rice vinegar
- 1 tablespoon sugar
To Serve
- Steamed short-grain rice
- Lemon wedges (if not using yuzu)
Preparation and Cooking Method
1. Mix the Marinade
Whisk the white miso, yuzu juice, mirin, sake, sugar, and soy sauce in a bowl until the miso disperses and the sugar dissolves. The mixture should be smooth and the consistency of heavy cream. If using lemon and orange juices, combine them before adding.
2. Marinate the Fish
Pat the trout fillets dry with paper towels. Season the flesh side lightly with salt. Place the fillets flesh-side up in a shallow dish. Spoon the marinade over them, spreading it evenly. Cover and refrigerate for 30 minutes. The yuzu and miso will begin to season the surface; longer marination (up to 1 hour) is fine but may soften the texture slightly.
3. Prepare the Pickled Cucumber
Toss the cucumber slices with the salt in a colander and let them sit for 10 minutes. Rinse under cold water, then squeeze firmly to remove excess liquid. In a bowl, stir together the rice vinegar, sugar, and shiso until the sugar dissolves. Add the cucumber, toss, and set aside. The pickle will be ready after 15 minutes and keeps its crunch for several hours.
4. Grill the Trout
Heat a grill pan or outdoor grill to medium-high. Brush the grates with neutral oil. Remove the fillets from the marinade, letting excess drip back into the dish. Place them skin-side down. Cook for 4 minutes without moving. The skin will release when it is browned. Flip and cook the flesh side for 3 minutes. The surface of the miso glaze should develop a deep amber colour with a few charred spots. Internal temperature at the thickest point should reach 52°C. If a fillet sticks to the grill, wait 30 seconds before flipping.
5. Rest and Serve
Transfer the fillets to a warm plate, skin-side up, and rest for 3 minutes. Slice each fillet across the grain into thick pieces. Divide the steamed rice among bowls, add the trout, and spoon the pickled cucumber alongside. Serve immediately.
Chef’s Notes for Success
- Yuzu substitution: Fresh yuzu is available from Japanese grocers in season, but bottled yuzu juice works. If neither is available, combine 1½ tablespoons lemon juice with ½ tablespoon orange juice and a pinch of zest; the flavour leans more citrus-forward but complements the miso.
- Miso choice: White miso (shiro miso) is the sweetest and mildest. Awase (mixed) miso also works. Red miso is too intense and would dominate the yuzu.
- Skin management: Dry the skin before grilling. Any moisture creates steam and prevents browning.
- Marinade time: 30 minutes is enough for the flavour to adhere without curing the fish. Overnight marinating is too long for this ratio of acid.
- Grill temperature: Too hot and the sugar in the miso will burn before the flesh cooks. Medium-high (around 200°C at the cooking surface) gives a steady caramelisation.
- Resting: Carryover heat brings the core to about 55°C, leaving the centre moist.
