The Greek Plaki Method Meets Lake Taupō

The Fish and Pan
- 2 Whole Rainbow Trout: From Lake Taupō, gutted and scaled, approximately 600g each
- 2 Tablespoons Extra Virgin Olive Oil: Greek Koroneiki variety provides peppery notes
- 1 Large Ceramic Baking Dish: Sized to hold trout in one layer
The Broth
- 400g Ripe Tomatoes: Fresh and diced; or canned San Marzano, drained
- 1 Large White Onion: Sliced into thin rings
- 4 Cloves Garlic: Peeled and lightly crushed
- 120ml Dry White Wine: Sauvignon Blanc from Marlborough
- 60ml Water
- 1 Bay Leaf: Dried or fresh
- 1 Cinnamon Stick: 5cm piece
- 1 Teaspoon Sea Salt
- 1/2 Teaspoon Black Pepper: Freshly cracked
The Garnish
- 100g Kalamata Olives: Pitted
- 2 Tablespoons Capers: Rinsed if salt-packed
- 1 Bunch Fresh Oregano: Leaves picked, stems reserved
- 1 Bunch Fresh Parsley: Flat-leaf, roughly chopped
- 1 Lemon: Sliced into rounds
To Serve
- Crusty Bread: Sourdough or Greek village bread
- Additional Olive Oil: For drizzling
Preparation and Cooking Method
1. Sauté the Aromatics
Heat olive oil in a large skillet over medium heat. Add onion rings and cook for 8 minutes until soft. Add garlic and cook for 1 minute until fragrant. Pour in white wine and simmer for 2 minutes.
2. Build the Sauce
Add tomatoes, water, bay leaf, cinnamon stick, salt, and pepper. Stir and bring to a gentle simmer. Cook for 5 minutes until tomatoes begin to break down. Remove from heat.
3. Prepare the Trout
Rinse trout under cold water and pat dry. Score the skin on both sides with three diagonal cuts, 5mm deep. Rub the cavity with reserved oregano stems.
4. Assemble
Spread half the sauce on the bottom of the baking dish. Lay trout in the dish. Tuck lemon slices under and around the fish. Scatter olives and capers over the top. Pour remaining sauce over the fish.
5. Bake
Preheat oven to 180°C. Cover the dish tightly with foil. Bake for 25 minutes. Remove cover and bake for 10 minutes longer. The flesh should appear opaque and separate easily from the spine when tested with a fork at the thickest part behind the head.
6. Rest and Serve
Remove from oven and let stand for 5 minutes. Scatter fresh oregano leaves and parsley over the fish. Drizzle with additional olive oil. Serve directly from the baking dish with bread.
Chef’s Notes for Success
- Tomato selection: Fresh tomatoes must be ripe; unripe fruit produces acidic sauce. Canned San Marzano tomatoes offer consistent sweetness.
- Wine substitution: If avoiding alcohol, substitute wine with equal parts fish stock and 1 tablespoon lemon juice.
- Fish size: Two 600g trout feed four people. Single large trout over 1kg requires 10 minutes additional covered cooking time.
- Oregano handling: Dried oregano works at half the volume of fresh, but add it during the sauce simmering stage.
- Make-ahead: Prepare the sauce up to 3 days in advance and refrigerate. Bring to room temperature before pouring over fish.
