Ingredients:

  • 4 salmon fillets (6 oz each)
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion
  • 2 inches ginger
  • 2 tbsp sambal oelek (often referred to as Spicy Malay paste)
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tsp palm sugar (or brown sugar)
  • 1/4 tsp turmeric powder
  • Salt and pepper, as to your taste preferences
  • Fresh cilantro
  • Lime wedges

Spice Paste:

  • Dice the onion, and slice the ginger. Mince the cloves of garlic if you haven’t already.
  • Using a blender or food processor, combine garlic, onion, ginger, sambal oelek (often referred to as Spicy Malay paste), soy sauce, lime juice, palm sugar, turmeric powder, salt, and pepper.
  • If using a food processor, stir until it is easy to move a spoon in.
  • Blend until smooth.

Instructions:

  1. Prepare the spice paste (see the section dedicated to this)
  2. To marinate the salmon, place the salmon fillets in a shallow dish and coat with around two thirds of the spice paste.
  3. Cover and refrigerate the salmon for at least 30 minutes or up to 2 hours. Do not move on to the next step until your chosen amount of time is over.
  4. Heat one tablespoon of vegetable oil in a large skillet over medium to high heat.
  5. Remove the salmon from the marinade, letting any excess liquid drip off.
  6. Add the salmon to the pan, skin side up (if it has skin). Cook for 3-4 minutes or until the skin is crispy. Flip and cook for an additional 3-4 minutes or until cooked through.
  7. Reduce heat to medium. Pour the remaining spice paste into the pan and simmer for 1-2 minutes or until slightly thickened.
  8. Garnish with cilantro and serve with lime wedges. Traditionally, Spicy Malay Salmon is served with steamed rice or roti.
