Ingredients:
- 4 brown trout fillets (6 oz each)
- 1/2 cup white miso paste (alternatively, soy sauce and sake, or, dashi powder dissolved in water)
- 1/4 cup sake (or dry white wine)
- 1/4 cup mirin (alternatively, sweet Japanese cooking wine, or, sugar and water mixed at a 1:1 ratio)
- 2 tbsp rice vinegar (white vinegar also works if needed)
- 2 tbsp vegetable oil (olive oil also works if needed)
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tsp sesame oil
- Salt and pepper, to taste
- Fresh sesame seeds
- Chopped scallions
Miso Glaze:
- In a small saucepan, whisk together miso paste, sake, mirin, rice vinegar, and garlic.
- Bring to a simmer over medium heat, whisking constantly.
- Reduce heat to low and cook for 5 minutes or until thickened.
- Remove from heat and stir in ginger and sesame oil.
- Let the glaze cool down to room temperature.
Instructions:
- Rinse the trout fillets under cold water and pat dry with paper towels.
- Preheat a grill or grill pan to medium-high heat. Brush the trout fillets with vegetable oil and season with salt and pepper. Grill the trout for 4-5 minutes per side or until cooked through.
During the last minute of grilling, brush the miso glaze evenly over both sides of the trout. - Garnish with sesame seeds and chopped scallions.
