Ingredients
- 4 fresh perch fillets, skinless
- 2 tablespoons olive oil
- 1 lemon, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh dill, chopped
- 1/2 cup dry white wine or chicken broth
- Salt and freshly ground black pepper to taste
- 1 tablespoon capers, drained (Optional)
Instructions
- Begin by ensuring your perch fillets are cleaned and thoroughly dried with paper towels.
- Season the fillets generously with salt and pepper. For added crispiness, consider lightly dusting the fillets with flour before cooking.
- Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the perch fillets. Cook the Perch for about 2-3 minutes per side, or until the fish is golden and flakes easily. Be careful not to overcook (perch is easy to overcook and is rather sensitive)
- After removing the fillets, reduce the heat to medium. Add minced garlic to the skillet and cook until fragrant, about 30 seconds. Pour in the white wine or chicken broth, scraping up any flavorful bits from the skillet. Let it reduce slightly for about 2 minutes.
- Stir fresh thyme and dill into the skillet. If you enjoy a briny twist, add capers at this stage. This creates a lovely sauce that compliments the Perch perfectly.
- Return the perch fillets to the skillet, spooning the sauce over them. Let them cook for an additional minute to allow the flavors from the sauce and the fish to meld together. Serve hot, garnished with lemon slices and a small drizzle of the pan sauce.
