Japanese Grilled Salmon Teriyaki Recipe

Here at Great Lake Fishing Tours, we regularly try new ways to cook fish, and today we have found one the whole team loves. This Grilled Japanese Teriyaki recipe produces the most beautiful salmon we have tried so far.

Ingredients:

  • 4 salmon fillets (6 oz each, skin removed)
  • 1/2 cup Teriyaki sauce (see homemade sauce recipe below or use store-bought)
  • 1/4 cup sake (Japanese rice wine) or dry white wine
  • 2 tbsp mirin (sweet Japanese cooking wine)
  • 2 tbsp brown sugar
  • 2 tsp grated ginger
  • 2 tsp garlic, minced
  • Sesame oil and chopped green onions for garnish (optional)

Homemade Teriyaki Sauce Recipe:

  • 1/2 cup soy sauce
  • 1/4 cup sake or dry white wine
  • 1/4 cup mirin
  • 2 tbsp brown sugar
  • 2 tsp grated ginger
  • 2 tsp garlic, minced

Mix until it has a smooth texture.

Instructions:

  1. Prepare the Teriyaki sauce: In a small saucepan, combine soy sauce, sake, mirin, brown sugar, grated ginger, and garlic. Bring to a boil over medium heat, then reduce heat to low and simmer for 5-7 minutes or until the sauce thickens slightly. Let cool.
  2. Prepare the salmon: Rinse the salmon fillets under cold water, pat dry with paper towels, and set aside.
  3. Marinate the salmon: In a large ziplock bag or shallow dish, combine the cooled Teriyaki sauce, sake, mirin, and brown sugar. Add the salmon fillets, turning to coat evenly. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 2 hours or overnight (6-8 hours).
  4. Preheat the grill: Preheat a grill or grill pan to medium-high heat (400°F/200°C). Remove the salmon from the marinade, letting any excess liquid drip off.
  5. Grill the salmon: Place the salmon fillets on the grill, skin side down (if they have skin). Close the grill lid and cook for 4-5 minutes or until the skin is crispy and golden brown. Flip the salmon over and cook for an additional 3-4 minutes or until cooked through to your desired level of doneness.
  6. Glaze with Teriyaki sauce: During the last minute of grilling, brush the salmon fillets with the remaining Teriyaki sauce.
  7. Serve: Remove the salmon from the grill and garnish with a drizzle of sesame oil and chopped green onions (if desired). Serve immediately with steamed rice and stir-fried vegetables, if desired.

Tips and Variations:

  • For a crisper crust, pat the salmon dry with paper towels before grilling.
  • If you prefer a sweeter Teriyaki sauce, reduce the soy sauce amount and increase the brown sugar.
  • Serve with pickled ginger and wasabi for an authentic Japanese experience.
